“There is no shortage of methods for grilling ribs—it's a near religion to the devotees who swear by one style over all others. Underlying all the opinions, though, is the fact that ribs need to be cooked long and slow with medium-temperature indirect heat. The initial cooking time is 1 1/2 to 2 hours in a grill that is kept at 200°F to 250°F. Keep the lid closed until the final 5 to 10 minutes, when you can baste them with barbecue sauce. You can also pre-cook the ribs in your oven and then transfer them to the barbecue for the last 5 to 10 minutes of basting. Ribs benefit more than almost any other food from authentic smoky flavor and aroma, so experiment with wood chips on the coals (or in a smoker box for gas grills).”
